Alkemisten Kaffebar

Alkemisten opened on Hisingen's Gustaf Dalensgatan, in what founder Kristian Hedborg has described as a still-under-construction Kvillebäcken, after he left a difficult café partnership and read Paulo Coelho's The Alchemist, which gave the new venture its name. Within two months the café was nominated for Rising Star of the Year at Sweden's White Guide awards, and in 2019 Alkemisten won the Swedish Roasting Championship; in 2022 it placed second at the Svenska Gastronomipriset for outstanding coffee experience. Swedish daily Svenska Dagbladet has credited it with shaping not just Gothenburg's coffee scene but the country's, and USA Today quoted Hedborg on specialty coffee's move into a 'fourth wave,' where each cup carries a farmer's and a terroir's story. The Lindholmspiren location extends that philosophy into food, serving weekday vegetarian and vegan lunches alongside the espresso bar. Beans are sourced as traceable specialty coffee, organic where available, roasted with attention to origin and sold in bags noting tasting notes such as cherry, plum, butter, and honey. Two sites on Hisingen now carry the name a champion roaster built from a single unfinished shopfront: a neighborhood coffee bar with competition-grade roasting and a menu built around ingredient transparency rather than volume.
