Arthur Bryant took over the pit from his brother Charlie, a protégé of barbecue pioneer Henry Perry, and built the grainy, cayenne-heavy sauce that presidents from Truman to Obama have eaten at the counter. The 18th and Brooklyn location, near the old Municipal Stadium, still smokes ribs and burnt-end sandwiches over hickory and oak the way it did when Bryant earned the nickname 'King of Ribs.'
