What Billy's Boudin & Cracklins is known for
Billy and Patsy Frey started selling boudin and cracklins off a gas-station counter in Krotz Springs in 1995, mostly to get people through the door. The prizes came at the Port Barre Cracklin Festival, and the Lafayette store followed in 2019. Production is still their own, in Port Barre, and still not farmed out to a co-packer.
