Cime

Cime is a specialty-coffee roaster and shop at 20 Rue des Hauts-Pavés in Nantes, built around named, single-farm micro-lots rather than anonymous origin labels. Its current lineup includes a Sidra-variety lot from Finca La Soledad in Ecuador, described with notes of pomegranate and honey; Colombian coffee from Aroma Nativo and Finca Nogales; and a Caturra-variety lot from El Campo in Peru.

The company frames its roasting philosophy in three words -- "precise, intense, clear" -- and says it controls the roast specifically to bring out each lot's aromatic profile rather than roasting toward a house-style darkness. That farm-level naming convention, carried through to the shop's product pages, is the clearest distinguishing detail of Cime's offer.

Beyond bagged beans, Cime runs tasting workshops and sells brewing equipment and gift sets from its Nantes shop, along with a subscription for regular deliveries. For a roaster operating from a single storefront, the combination of named micro-lots, a stated notes-preserving roast approach, and in-house tasting workshops positions Cime closer to a specialty coffee bar than a conventional retail roastery.
