Gadira works wild bluefin tuna caught by the traditional almadraba trap nets off Zahara de los Atunes, Tarifa and Conil. The tuna is sold fresh, ultra-frozen at −60°C, and as traditional salazones such as mojama and canned conservas of ventresca and tarantelo.
