Novo Coffee

Novo Coffee has roasted in Denver since 2002, a run long enough that the company now bills itself as a pioneer of the city's coffee culture rather than a newcomer to it. The approach is relationship-based: green coffee moves from producers and importers to the roastery with as few intermediaries as possible, and the current single-origin list names its lots specifically — Indopusaka and Java Frinsa from Indonesia, Danche from Ethiopia, alongside a Kovachii selection. Four locations carry the name today: cafes downtown, in Congress Park, and in Cheesman Park, plus the Larimer Street roastery where the beans are actually roasted. Beyond bagged coffee, Novo runs a subscription service and public brewing classes, extending the relationship past the point of sale to teach customers how to get more out of the beans at home. It's a small footprint by design — four rooms rather than a regional chain — which keeps the roastery close enough to its own cafes that a bag of Danche sold downtown was very likely roasted a few miles away on Larimer Street the same week.
