Square One splits its operation across two Lancaster addresses: a cafe at 145 North Duke Street where customers order and pick up, and a separate roasting headquarters on Elizabeth Avenue where small batches are roasted daily. Beyond the retail counter, Square One runs wholesale accounts supplying other Lancaster businesses and an in-house coffee education program, putting it in the position of teaching the same brewing and sourcing standards it applies to its own roasting. The cafe keeps generous hours, open from 7 a.m. on weekdays and 8 a.m. on weekends, extending into early evening seven days a week. For a roaster of its size, maintaining a standalone roasting facility separate from the retail cafe -- rather than roasting behind the counter, as many small operations do -- is an unusual structural choice, and one that lets Square One scale its wholesale and education work independent of cafe foot traffic.
