What The Coffee Collective is known for

Founded in 2007 by three champion baristas, this Copenhagen roastery buys green coffee directly from farms and publishes the prices it pays. Nine cafes across Copenhagen and Aarhus sell the beans alongside brewing courses and subscriptions.

The Coffee Collective was founded in 2007 by Klaus Thomsen, Peter Dupont and Casper Engel Rasmussen, three baristas with the titles to back up the ambition: Thomsen won the World Barista Championship in 2006, Rasmussen the World Cup Tasters Championship in 2008. The roastery opened its first café on Jægersborggade the following year, and has since spread to nine locations across Copenhagen, Frederiksberg and Aarhus, including a stall in the Torvehallerne market and a dedicated bakery on Nørrebrogade.

The company's defining practice is buying green coffee directly from farms and publishing what it pays for it — a transparency move meant to prove, in numbers, that its direct-trade claims aren't just packaging language. It has since become a certified B Corp, formalizing that commitment to fair pricing and sustainability under an external standard rather than self-description alone. Coffee is roasted in Copenhagen and sold both by the bag and through in-house courses that teach the roasting and brewing methods behind it.

After seventeen years of founder-led operation, Rebecca Vang joined as CEO in 2024, while Thomsen, Dupont and Rasmussen retained full ownership and stayed on — Thomsen overseeing coffee shop quality, Rasmussen running the roastery. The founders' direct hand in daily operations is still part of what the shops sell.
