What Arkhangelsky Pryanik (Kozuli gingerbread) is known for
This Arkhangelsk workshop formalized home kozuli-baking into a certified professional bakery in 2010, hand-icing the northern Pomor gingerbread into animal and figure shapes. It opened its own Museum of Arkhangelsky Pryanik-Kozuli in 2017, with tours and hands-on icing classes.
Kozuli -- the carved, hand-iced gingerbread of Russia's Arkhangelsk region -- had long been a home-kitchen craft before this workshop turned it into a formal business in 2010, adding quality certification, paid staff and registered tax status to what had been an informal Pomor holiday tradition.
The workshop bakes kozuli across a range of sizes: small tree-ornament pieces for decorating, palm-sized treats sold on the folk saying that a kozuli in the house brings prosperity, large custom gift pieces with room for inscriptions, and dimensional figures shaped like cottages, boxes, ships and horses, plus corporate custom orders. Each piece is finished by hand with sugar-glaze icing in the traditional animal and figure forms specific to the craft.
In 2017 the business added a dedicated Museum of Arkhangelsky Pryanik-Kozuli, running an exhibition tour titled "From Kozuli to Pryanik" and hands-on classes where visitors decorate their own pieces -- pairing the retail bakery with a standing showcase of the regional craft's history.
