Blue Bottle Coffee started in 2002, when James Freeman — a professional clarinetist who'd been home-roasting on the side — put $20,000 into turning the hobby into a business. He began with an espresso cart at the Old Oakland Farmers Market, built around a simple rule that still defines the company: coffee served within 24 hours of roasting, well below the industry norm at the time.
The first seven-day-a-week shop, a kiosk on Linden Street in San Francisco's Hayes Valley, opened January 23, 2005. From there Blue Bottle grew into one of the companies credited with defining third-wave coffee — pour-over as ritual, minimal branding, beans treated as a perishable product rather than a shelf-stable one. The company's ownership has shifted since: Nestlé bought a 68% stake in 2017, and in 2026 Centurium Capital acquired Blue Bottle's global retail operations from Nestlé for roughly $400 million — a sale that closes one chapter of the story without touching the roast-within-a-day premise the cart started with.
