Pasticceria Borsari was founded in Verona in 1902 by pastry chef Tiziano Golfetti, who took the name from the city's ancient Porta Borsari gate. Golfetti built a reputation on leavened holiday sweets - panettone, pandoro and colomba - made with real butter rather than margarine and a long fermentation process; the classic panettone is worked over roughly 72 hours to keep the yeast active through proofing. The brand's line has since expanded into flavoured panettone, the Fagianelle and Ovo Borsari lines, and Easter colombe. Ownership has passed to the Muzzi family, and the business now operates within the IDB group.
