Cecinas Pablo began in 1993 when its founders, unable to find cecina that met their own standards, started curing beef in the basement of their Astorga shop using traditional salting and smoking. The company, based on Calle La Cecina in Astorga, has since expanded into jamón serrano, Iberian products and pastrami while keeping cecina de vacuno as its core product.
