centralRÖSTEREI grew out of vinocentral, a Darmstadt wine and delicatessen business that owners Michael Bode-Böckenhauer and Alexander Marschall have run since 1989, turning a string of listed buildings and former industrial sites near the city's main station into hospitality and cultural venues. Coffee entered the business in 2008, when the shop started roasting its own beans on a small drum roaster right on the sales floor because freshness was the one thing bought-in roasted coffee couldn't guarantee; in 2022 the roastery outgrew that setup and moved into larger premises, where it now runs on a Loring roasting machine, a US-built model prized for lower emissions and precise, repeatable roast profiles. Green beans are bought from small plantations worldwide with an explicit emphasis on sustainable growing and fair terms for the farmers who supply them, then roasted in small, handcrafted batches with roast profiles tuned per lot rather than a single house curve applied across the board. The finished coffee — espresso and filter roasts, single origins, blends and subscriptions — is sold from the shop at Platz der Deutschen Einheit, with beans shipped across Germany and the wider EU.
