The business began in 1980 as Michelle DeWees's outdoor ristra stand and was rebuilt by her son Ken DeWees around fresh Hatch chile. Frozen green chile sits with salsas and hot sauces, and ristras hang above the shelves. An outdoor roasting yard opens in early August when the green chile season begins.
