Copenhagen Coffee Lab was founded in 2013 by four partners -- Steen Skallebaek, Ole Kristoffersen, Jacob Karlsen, and Allan Nielsen -- with Nielsen's own path into coffee running through an earlier cafe he opened with a friend before he broke off to start his own roastery. The company opened its roastery in a converted factory building in Amager, on Copenhagen's southern edge, alongside its first central Copenhagen cafe, and took its Nordic roasting approach abroad almost immediately: within two years it had opened a second cafe in Principe Real, a neighborhood in Lisbon, giving the company its distinctive Danish-Portuguese identity from early on rather than as a later expansion. All beans are roasted at the Amager facility and sold within two weeks of roasting, a freshness window the company treats as a core part of its light, Nordic-style roast profile. The business has since grown into a chain with cafes across Denmark, Germany, France, and Portugal, plus outlets in Copenhagen Airport, and it runs wholesale and franchise arms alongside its retail cafes. The consistent thread across markets is the roasting style itself -- light-roasted, filter-forward coffee developed in Copenhagen and exported largely unchanged to warmer climates, rather than adapted cafe-by-cafe.
