What Fukuya is known for
Founded in Hakata's Nakasu district in 1948, Fukuya originated Japan's karashi mentaiko by seasoning salted pollock roe for local tastes. The Nakasu flagship sells the marinated roe alongside its factory-museum, Hakuhaku, where visitors watch the curing process.
