Hyotan Onsen in Beppu's steam-wreathed Kannawa district fills every pool with free-flowing natural hot-spring water and adds sand and steam baths heated by geothermal vapor. Its kitchen serves jigoku-mushi, foods cooked directly in that hot-spring steam, alongside Oita dishes such as kabosu udon.
