What Kamoizumi Shuzo is known for
Founded in Saijo in 1912, Kamoizumi was an early adopter of junmai brewing, making sake from only rice, rice koji and water from 1965 and releasing its Honjikomi junmai in 1972. Its three-step fermentation and avoidance of charcoal fining give its sake a characteristic golden color and full body.
