La Fabrica Samana is a working farm, factory, and roastery on the Samana peninsula run by Hector Lazcano and Shauna Sutherland out of Lodo Blandito, in the municipality of Sanchez. The operation grows, ferments, and roasts its own coffee and cacao under a regenerative, shade-grown model -- a "soil to cup, tree to bar" approach that keeps the tree canopy intact instead of clearing land for open-sun rows. Shade-grown coffee is slower and lower-yield than sun-grown, but it supports far more biodiversity in the surrounding forest and gives farmers a second income stream from the same land, since cacao and other shade crops can be intercropped alongside the coffee trees. The on-site cafe pours the results of that process directly, while the coffee and cacao are also sold retail and wholesale beyond the farm gate. Open daily, La Fabrica functions less as a roadside stand than as a demonstration of a specific farming philosophy: that a working farm, a processing factory, and a public cafe can share the same address, letting visitors taste the outcome of decisions made a few hundred meters away in the fields.
