What Lark Distillery is known for
Founded in 1992 by Bill and Lyn Lark, this distillery is credited with reigniting Tasmania's whisky industry after Bill lobbied to change colonial-era laws that had blocked small-still distilling for over 150 years. Its Davey Street cellar door on the Hobart waterfront pours single malts made with peat cut from the family's own Tasmanian Highlands bog and casks sourced from local fortified-wine producers.
