Maison Adam traces its origin to 1660, when Louis XIV married the Infanta Maria Theresa of Spain in Saint-Jean-de-Luz and the town's confectioner, Monsieur Adam, served macarons at the celebrations. The family has kept the recipe essentially unchanged for more than 360 years, passing it down through 13 generations, and the shop still operates from Saint-Jean-de-Luz today. Beyond macarons, the house also produces other Basque specialties such as gateau basque, and remains an independent, family-owned business.
