What Nitanda Shoyu is known for
A Nakatsu soy-sauce brewery of about a century, Kurakobo Nitanda naturally brews shoyu and miso and builds dressings, ponzu, sauces and noodles on that base with local yuzu and kabosu. The family still bottles and labels by hand and delivers to neighbourhood customers door to door.
