What Pasta Garofalo is known for
Garofalo has made pasta in Gragnano since 1789, when Michele Garofalo secured a royal concession to produce pasta in the town credited with inventing bronze-die drawing. Its durum-wheat shapes are still extruded through bronze dies — leaving the rough, porous surface that grips sauce — and carry the Pasta di Gragnano IGP certification.
