Perché No! ("Why Not?") opened its doors in 1939 in Florence and has operated for over eighty-five years as a landmark gelateria. Located between Piazza della Signoria and Piazza della Repubblica in central Florence, the shop is run by the Cammilli family, maintaining traditional recipes and high production standards. During World War II, when ingredient and refrigeration shortages threatened the business, the gelateria innovated by creating the patented "semifreddi"—mousse-like confections that became so popular they have since been replicated across Italy and internationally. Today, Perché No! continues making everything by traditional methods using high-quality ingredients: fresh milk, cream, eggs, and seasonal fruit.
