Brothers Seamus and Kevin Sheridan began selling Irish farmhouse cheese at Galway market in 1995 and opened their South Anne Street shop soon after. The counter stacks raw-milk rounds of Durrus, Coolea and Cashel Blue alongside European cheeses, charcuterie and oils.
