Theodor Tollkötter founded this Münster bakery in 1905 on Ewaldistraße; what began as a small family shop has grown into a mid-sized operation employing more than 60 trained bakers and pastry specialists. The bakery now turns out roughly fifty bread varieties and thirty kinds of rolls each day, including its popular Knüfchen.
Its signature loaf, the Hausbrot, was created by baker Johannes Bungardt: a seven-pound sourdough rye-wheat loaf with a thick, crackling crust, distinguished by continuous DLG quality certification. The bakery mills its own grain on natural millstones at its production site, and has built a specialty around reviving heritage varieties like emmer, an ancient grain cultivated for some 8,000 years, sourced from local growers for its higher mineral content.
Tollkötter sells through six retail branches across Münster and its weekly farmers' market stalls, and ships bread nationally through its Brotversand mail-order service, extending a century-old recipe well beyond the city where it started.
