What Yamanashi Meijo (Shichiken) is known for
Yamanashi Meijo has brewed sake under the Shichiken name in Hakushu since 1750, drawing on subterranean water from the Southern Alps that also supplies the area's whisky distillers. The heritage brewer has since added sparkling sake and whisky-cask-aged spirits alongside its traditional junmai lines, sold through its own site and Hakushu tasting room.
