Belleville Brûlerie — operating under the umbrella name Cafés Belleville — was founded in September 2013 by David Flynn (previously of Télescope), Thomas Lehoux, and Anselme Blayney (both of Ten Belles and Le Bal Café), combining a specialty roastery with two Paris coffee shops in the 19th arrondissement. The roastery's own site describes a made-to-order model: customers select a quantity of a named blend — such as 'La Pantoufle' or 'Château Belleville,' both listed by name and price on the site — and the beans are roasted and shipped the same day rather than pulled from pre-roasted stock. The catalog runs both whole bean and ground formats, alongside equipment (grinders, filters, espresso machines) and a subscription service for repeat orders, plus in-person tasting workshops at the boutique. Belleville's three founders each came from established Paris specialty-coffee ventures before combining forces, which places this roastery at the origin point of much of the city's current wave of independent coffee shops rather than as a later entrant into an already-established scene.
