El Maestro Sierra keeps a small Jerez solera founded in 1830 and has been run for decades by women, first Pilar Plá Pechovierto and now her daughter María del Carmen Borrego Plá. The house is sought out for concentrated old amontillado, oloroso and palo cortado drawn from tiny, slow-turning scales.
