Founded 2013 in the 19th arrondissement by David Flynn, Thomas Lehoux (of Ten Belles) and Anselme Blayney, among the first specialty roasters in a Paris that then had only a handful of aligned cafes.
Belleville Brûlerie operates under the brand name Cafés Belleville from the 19th arrondissement of Paris. It was founded in September 2013 by three people already established in the city's coffee scene: David Flynn, formerly of Télescope; and Thomas Lehoux and Anselme Blayney, both previously of Ten Belles and Le Bal Café. Rather than opening as a standalone café, the founders built a combined roastery-and-shop model — the site describes selecting a named blend by quantity, then roasting and shipping it the same day, so beans reach the customer freshly roasted rather than pulled from held stock. Two named blends appear directly on the site's shop pages, La Pantoufle and Château Belleville, both hundred-percent arabica. Beyond the roastery, the operation runs a subscription program, sells brewing equipment, and hosts tasting workshops at its Paris boutique.
