Cafe Marcel opened in 2014 at the foot of the Schlossbergbahn funicular in Freiburg's Stadtgarten, and in 2018 added its own in-house roastery, Günter Coffee Roasters, roasting weekly by hand rather than buying in beans. Owner Philip Weller holds the title Deutscher Röstmeister 2024 — German Master Roaster 2024 — a specific, named credential rather than a general claim of expertise. The house blend, an espresso roast built from Arabica beans sourced across multiple countries, is named Günter after the roastery itself and anchors both the coffee and mixed coffee drinks on the menu. Everything roasted at Cafe Marcel is held to what the company calls Specialty Coffee quality level, the industry's top classification, with an emphasis on developing each bean's individual flavor rather than roasting to a uniform house profile.
