Verlet's own site dates the business to 1880 at its original address, 256 Rue Saint-Honoré, describing itself as the oldest house to master artisanal roasting in Paris — 'la plus ancienne maison à maîtriser une torréfaction artisanale.' The roasting itself now happens a short distance away, at 27 Rue de Montpensier behind the Palais Royal gardens, where the company says beans are roasted according to their individual character and the day's weather rather than on a fixed cycle: 'les grains sont cuits à cœur en fonction de leur nature et du temps qu'il fait.' The Saint-Honoré address retains a historic tasting salon, and the shop specializes in single-origin coffees — 'cafés de pure origine' — sold alongside curated teas, honey, jam, chocolate, and biscuits. Verlet predates the current wave of Paris specialty roasters by more than a century, and unlike newer entrants built around direct-trade sourcing narratives, its distinguishing claim is continuity of place and craft: the same neighborhood, an artisanal roasting method unchanged in principle since the nineteenth century, and a tasting room still open in the original building rather than relocated or franchised.
