Confiture Parisienne was founded in 2015 by Nadege Gaultier and Laura Goninet, two Parisians - one from a restaurant background, the other from advertising for organic brands - who set out to revive the city's own jam-making tradition, largely lost by the early 20th century after once being a genuine Parisian specialty supplied by orchards on the capital's outskirts. Their preserves are made in small batches in copper cauldrons using traditional methods, with fruit sourced at peak season and unrefined sugar, then packaged in white-lacquered jars meant to protect the contents from light. Production takes place in a workshop under the arches of the Viaduc des Arts, which the brand describes as the only jam-making atelier in Paris.
