DIBS Coffee started in 2017 behind a single coffee machine in Newstead, Brisbane, built on a gap its founders had spotted in the local market: the city had no shortage of boutique cafes, but too few small roasters that could actually back those cafes with consistent training and quality control. What began as a one-machine operation has grown into a Morningside-based roaster and wholesale supplier, still built around the same premise -- ethically sourced beans, roasted in Brisbane rather than trucked in from interstate, sold direct to drinkers as well as through a wholesale program supplying local cafes. DIBS pitches itself at customers who have strong, specific opinions about coffee the way some people have opinions about music, rather than drinkers chasing whatever's trending -- positioning its own regulars as the ones setting the trend, one cup at a time, instead of following it. The Morningside space functions as both retail counter and dispatch point for the wholesale side, letting customers buy the same beans a Brisbane cafe down the street is likely pouring through its own machines.
