Fou de Patisserie was opened in April 2016 at 45 rue Montorgueil in Paris's 2nd arrondissement by Julie Mathieu and Muriel Tallandier, who had already built the Fou de Patisserie magazine into a reference point for French pastry culture before extending the brand into a physical boutique. The shop's concept is a curated, rotating selection of signature creations from a wide range of Paris's best-known pastry chefs, brought together in a single counter rather than being the output of one in-house pastry kitchen.
