Frank Hederman has run the Belvelly Smokehouse for over four decades, cold-smoking Irish salmon over traditional timber and hanging the fish to smoke in the old way. The smoked salmon, along with smoked butter, nuts and spices, is sold at his English Market stall in Cork six days a week.
