Full City Rooster was founded in 2013 by brothers Michael and Chris Wyatt in the Cedars neighborhood of South Dallas, opening as an appointment-only roastery among the area's small brick studios and warehouses before slowly adding café hours as demand grew. Michael roasts on a Loring machine but configures every batch by hand rather than relying on the roaster's automation, trusting his own read of the beans over the equipment's presets. He was among the first roasters in Dallas to bring in single-origin lots from less common coffee-growing regions such as Yemen and Laos, alongside more familiar origins. The roastery has since expanded into a studio with proper café seating, a back patio and a performance area, and opened an outpost in Portland in 2020. Full City Rooster sells its roasted beans direct through its own online store, with the roasting studio itself remaining the center of the operation rather than a large café footprint.
