Gebroeders Niemeijer is an artisan French bakery in Amsterdam's city center, at Nieuwendijk 35, founded in 2008 by brothers Marco and Issa Niemeijer. Marco trained at the Rietveld Academy and worked as a cook; Issa studied sociology before training at bakeries including Gosselin in Paris and Hartog Bakery in Amsterdam, and has been sole owner and head baker since 2011. It is known for hand-shaped sourdough bread made with an 8.5-year-old starter, French-style viennoiserie, and patisserie items such as macarons and canneles. Issa Niemeijer's cookbook, 'A Book About Bread,' won a Gourmand World Cookbook Award in 2023.
