After the war, Kee Wah opened its first proper factory on Shanghai Street with ten staff and added mooncakes and Chinese bridal cakes to its offerings — the products that would come to define it.
The growth that followed is documented in concrete steps rather than vague claims of tradition: a second store on Pei Ho Street in Sham Shui Po in 1962, a switch from wood-fired to electric ovens in 1971, a first overseas bakery in Taipei in 1982, and a first American bakery in Los Angeles in 1984. Its current headquarters and primary production site is a factory in Tai Po that the company states is ISO 22000 and HACCP certified, a level of operational detail a purely nostalgic or defunct brand would not maintain.
