Adam, who is from Finistere in Brittany, trained at Le Gavroche in London and the Hotel de Crillon before spending years as head pastry chef at Fauchon starting in 1996, where he first began reworking the eclair's classic oblong shape with bold colors and unconventional flavor combinations. His shop's rotating lineup has included citron, pecan, salted caramel, hazelnut, and yuzu eclairs. Adam has been named pastry chef of the year by the Pudlo guide, and the concept expanded into additional shops in Paris and abroad, including Japan, Italy, Russia, and Canada.
