Leslie Mackie's path to Macrina Bakery began years before it opened, shaped by training at the California Culinary Academy and later by working under chefs Lydia Shire and Susan Regis in Boston and at Grand Central Bakery in Seattle. Travels through France and Italy fed the same idea for roughly fifteen years before she finally opened her own shop in Belltown on August 27, 1993.
National recognition arrived quickly by bakery standards. In 1996, Julia Child visited Macrina, praised its pastries, and selected Mackie to appear on her PBS series Baking with Julia, a rare spotlight for a three-year-old neighborhood bakery and one that helped define its reputation for years afterward.
Macrina has since grown to seven cafés across the Seattle area, from Belltown to Mercer Island, alongside a wholesale bread and pastry business and a monthly recipe club built around Mackie's own seasonal ideas. The bakery has also added an electric delivery fleet and a charitable partnership, but its identity still traces back to the same combination that caught Child's attention in 1996: classical training applied to daily bread.
