In 1980, Mireille's mother Constance turned that market presence into a permanent shop at 14 rue des Dentelles, in the Petite-France quarter, inside a building dating to 1643. Mireille took over the business in 1998 and has since expanded the range to more than 40 varieties, drawing on ingredients and flavors gathered from her travels to create recipes such as pains d'Amour, de Soleil, des Anges, and des Délices, each hand-spiced rather than machine-mixed.
The house has since opened a third Strasbourg boutique, and Mireille is described locally as an "Ambassador of Alsace" for keeping the region's gingerbread tradition alive in a historic quarter that draws heavy tourist foot traffic.
