Its founder, Madame Courtin, is credited with the house's signature recipe, a scallop confit that borrows curing techniques from southwestern French confit traditions and applies them to shellfish landed at Concarneau's market that same day. Billed as the oldest conservery in the town, the company has since built a wider range around that founding idea: fish spreads and rillettes, canned sardines, prepared seafood soups, and gift sets, all made without added colorants or flavor enhancers. Operations today are based a short distance away in Tregunc, from where the company runs six retail boutiques in addition to its online shop. Courtin also opens a production site to visitors as a free museum, letting them watch the canning process and sample the results.
