What Noble Coyote Coffee Roasters is known for
Noble Coyote is a national-award-winning micro-roastery and coffee lab in Dallas's Expo Park neighborhood, built around the line "grown by farmers, roasted by us, brewed by you." It hosts public cuppings on the first Saturday of every month alongside a monthly subscription program.
Kevin Sprague was roasting coffee at home as a hobby as early as 2003, years before he and his wife Marta left corporate jobs to launch Noble Coyote Coffee Roasters as a professional micro-roastery at the end of 2011. Run out of a coffee lab in Dallas's Expo Park neighborhood, the business keeps its door open to walk-in visitors who want to ask about roasting, grinding and brewing, and holds public cuppings on the first Saturday of every month where visitors taste new offerings and learn about their origins directly from the roasters. The results have been recognized well beyond Dallas: Noble Coyote has won or been a finalist for a national Good Food Award five times running (2018, 2019, 2022, 2023 and 2024), was named Best Coffee in Texas by Food & Wine magazine in 2018, and has repeatedly taken Dallas Observer honors for Best Cold Brew and Best Coffee Roaster across 2016, 2020, 2022 and 2025, along with a D Magazine award for Best Coffee Education in 2017. It was only the second Dallas roaster, after Oak Cliff Coffee Roasters, to win a Good Food Award, part of a small cluster of serious micro-roasters that has put the city on the specialty-coffee map.
