Michalis Pahtikos forges Cretan knives by hand on Sifaka Street, in Chania's historic Mahairadika cutlers' quarter, continuing a trade his father Apostolos built into the shop. Handles are fitted with bone, horn, olive wood and aspalathos, often engraved with traditional mantinades verses.
