Un Bien emerged as a continuation of a Seattle food legacy when brothers Julian and Lucas Lorenzo launched the restaurant following their father Lorenzo Lorenzo's well-known Paseo establishment closing and filing bankruptcy in 2014. Opening their first Ballard location on June 3, 2015, the brothers brought forward the Caribbean roast pork sandwich that had defined Seattle's sandwich culture. The signature dish combines a Macrina baguette with braised pork, traditional marinade, sweet onions, pickled jalapeño, romaine, and house aioli—representing the core of their father's original formulation. The Lorenzo brothers operate three distinct locations: Ballard on 15th Avenue Northwest, Seaview Avenue Northwest near Shilshole Bay, and Queen Anne on West Galer Street. While maintaining their father's core recipe, they have expanded offerings to include grilled chicken, roasted corn dishes with aioli, paprika, and parmesan. The restaurants have gained significant acclaim, appearing on The Infatuation's list of Seattle's best establishments. The brothers note they operate independently from their father, though acknowledge his historical role as founder.
