What Carstens Lübecker Marzipan is known for

Carstens began as a general confectionery in 1845 before turning exclusively to marzipan production by the early twentieth century, and in 1874 co-founder Charlotte Erasmi earned the title of supplier to the imperial court of Wilhelm I. The house keeps its almond paste content near 90 percent, well above cheaper commercial marzipan, so the almond flavor dominates rather than the sugar.
