Spice house opened by three-Michelin-star chef Olivier Roellinger after retiring from his restaurant Bricourt in 2010, rooted in Cancale's maritime spice-trade history. Sells peppers, salts, vanilla and blends from the Maison du Voyageur; boutiques in Cancale, Saint-Malo and Paris.
Olivier Roellinger, born in Cancale in 1955, grew up in the Maison du Voyageur, an 18th-century shipowner's mansion in the Breton port town long tied to the spice and trading routes of Saint-Malo. He began building spice blends into his cooking from 1984, and his restaurant Le Coquillage/Bricourt eventually earned three Michelin stars. In 2010, citing health reasons, Roellinger closed the restaurant and redirected the business toward spices, opening Épices Roellinger as a dedicated house for rare peppers, salts, oils, vinegars, vanilla, seaweed and original blends. Production and blending remain tied to the Maison du Voyageur in Cancale, and the brand has since opened boutiques in Cancale, Saint-Malo and Paris.
