Robert and Sonat Birnecker founded KOVAL in 2008 as the first distillery to operate in Chicago since the mid-1800s, working exclusively with organic grain from a single Midwestern family farm. The Ravenswood distillery bottles single-barrel whiskeys, gins, and botanical liqueurs and runs tours and tastings on site.
