La Brulerie Chartraine has operated in Chartres since 1959, originally from a shop at 5 rue Noel Ballay in the city center. Christophe Herbe's parents took over the roastery in 1999, and the family kept it at the same downtown address for more than two decades before Christophe opened a second location in March 2023, a purpose-built workshop at Parc de l'Equerre in nearby Bonville (Gellainville) designed to be more spacious and easier to access than the historic shop.
Both locations roast daily, working with green coffee sourced directly from producers across Latin America, Africa and beyond. Alongside the coffee, the shop sells loose-leaf teas including house-made blends that reference Chartres's own local heritage, plus chocolates, biscuits, honey, jams and nougat. One local specialty stands out on the shelf: mentchikoffs, a pralined candy particular to the region. Two roasting sites, more than 65 years under one name, and a shop-floor mix of daily-roasted coffee, tea and regional confectionery make La Brulerie Chartraine less a single-product roaster than a small grocery built around what its own ovens and roasters produce fresh each day.
